Gaotai salted duck is a local specialty of Funan with unique flavor. Free-range ducks are first selected which are raised for 120 days in the flood storage reservoir of Funan County on the bank of Huaihe River, and then are salted through traditional techniques combined with modern new technology. The ducks are dried naturally for days on end without adding any seasoning. The ducks are in good shape and taste flavorful. It is 100% natural green. On April 18, 2002, “Gaotai Salted Duck” was announced as a special product in the Great Hall of the People in Beijing according to the “marketing communications and physical distribution system constructed between the central and western regions and the coastal areas.”
