The history of Ran Zhaoguang Braised Pork Trotters dates back to 1908, when the ancestors of Ran Zhaoguang made a living by setting up stalls to sell braised dishes on the streets of Yingzhou Prefecture. Their specialty, braised pork trotters, gained fame locally and beyond. In 1947, with the establishment of a market in Ranmiao Township, Ran Zhanlu opened a restaurant and inn at the current location of Haoyuan Restaurant (formerly known as Zhaoguang Restaurant), marking the beginning of a fixed retail outlet for Ran Zhaoguang Braised Pork Trotters. After the reform and opening-up, the secret recipe was inherited by the head of the family, Ran Zhaoguang, who also registered a trademark for it. He later renamed the restaurant to the now-familiar “Zhaoguang Restaurant”. Chef Ran Zhaoguang has been braising at least 80 pork trotters every day for more than forty years. With the experience of braising millions of pork trotters and 27 upgrades to the recipe, every braised pork trotter not only exudes a delightful aroma, has a bouncy texture when bitten into, but also stimulates one’s appetite at the sight of it, leaving a lasting impression on those who taste it.
